Curries and Regional Spice Blends
Curry is a general term used for any spiced sauce or in some south Indian dialects, an old word for black pepper. These can be blends of powdered or whole spices and seasonings, wet or dry mixtures, mild or hot, depending on preference and regional style of cooking. As a rule, northern Indians favor dry powders, while in the South, pastes are more common.
However, curry, not masala, is now used the world over as a symbol for the spicy food of India.
I for one, LOVE spicy food and I have tried to keep my curry recipes as true to authentic
as possible. At home I mix my Curry Powder with Olive Oil to make a paste and use the paste to coat or marinate meat, flavor broths, sauces and rice.

Spice - (Middle Eastern)
Lebanese Mixed Spice is best used in Kafta and Kibbi recipes. It has a strong, bold
flavor with sweet under tones and a mild heat supplied by the black pepper. This blend is not to be confused with Arabic Seven Spice.

Moroccan Dry Rub
We have used traditional African herbs and spices and mixed those Fenugreek and Allspice Berries
to create this intense, bold, spicy rub. Best used with Chicken, Lamb, Beef and Pork and flavors are most prominant when marinates
for at least 30 minutes prior to grilling or roasting.
